- 1,25 dl water

- 1 red chilli
-
Coriander
Method

- Heat the oil in a large frying pan over medium heat.
- Add the egg mixture and cook, stirring, for about 30 seconds, or until it begins to set.
- Use a wooden spoon to gently stir the eggs until they are cooked.
- Top with pepper, chilli and coriander to serve.
Tip for extra creamy scrambled eggs
Stir the eggs gently as they cook to preserve their soft, creamy texture. Excessive heat can quickly dry out scrambled eggs.
To bring out the flavour even more, make sure you whisk the miso, ginger and water thoroughly with the eggs so the ingredients are distributed evenly throughout the dish.
Serving
Serve the Japanese-inspired scrambled eggs while they are still warm and soft. The creamy texture and aromatic flavours are at their best just after cooking. The fresh chilli and coriander add both colour and a fresh contrast to the rich flavour of miso and ginger.
To make the dish look a little more inviting, top with a little extra coriander and a few thin slices of chilli just before serving. This gives the dish an attractive, appetising appearance.
It is a simple dish that shows how much flavour you can create with just a few ingredients. The combination of eggs, miso, ginger and sesame oil offers an interesting variation on classic scrambled eggs that is both quick to make and full of character.
