Lamb chops with rosemary butter and lemon
Juicy pan-fried lamb chops served with warm rosemary butter and fresh lemon. A simple, flavoursome dish, perfect for both everyday dinners and guests.
Lamb chops are one of those dishes that can feel both simple and a little special at the same time. With a few good ingredients such as lemon, rosemary, butter and freshly ground pepper, you get a dish full of flavour without complicated preparation.
The warm rosemary butter gives the chops a rich, aromatic finish, while the lemon adds freshness and balance. The result is tender meat with plenty of flavour, perfect with salad, potatoes or a simple vegetable side dish.
For this dish, a 28 cm frying pan with removable handle is an obvious choice, as it offers plenty of room for the chops while being easy to handle in the kitchen. A Bluetooth meat thermometer can help you achieve your preferred level of doneness more precisely, and an oven glove is practical if you need to move the hot pan or place it directly on the table.
Lamb chops recipe
Serves: 4
Preparation: 15 min.
Cooking: 8-10 min.
Ingredients
- 8 lamb chops
- 2 tbsp olive oil
- salt and pepper
- 1 large lemon
- 1-2 sprigs fresh rosemary
- 100 g butter, preferably unsalted
- 1 clove garlic (optional)
- fresh rosemary to garnish (optional)
Method
- Season both sides of the lamb chops with salt and pepper.
- Wash the lemon and cut it into wedges or slices for serving.
- Melt the butter in a small pot or pan over low heat.
- Finely chop 1-2 sprigs of fresh rosemary and add to the butter. If desired, crush the garlic into the butter for extra flavour.
- Let the butter simmer gently for 2-3 minutes so the rosemary releases its aroma. Then turn off the heat and keep the butter warm.
- Heat the olive oil in a large pan over medium-high heat.
- When the pan is hot, add the lamb chops. Fry for approximately 3-4 minutes on each side for medium-rare, or longer if you prefer them more thoroughly cooked.
- While cooking, you can brush or drizzle the chops with a little of the rosemary butter for extra flavour.
- When the chops are done, remove them from the pan and place them on cutting boards or a platter. Let them rest for 5 minutes so the juices redistribute through the meat.
- Arrange the lamb chops on a platter or plates. Pour the warm rosemary butter over the chops and squeeze a little fresh lemon juice over the meat.
- Garnish with fresh rosemary leaves and lemon wedges if desired.
Tips for extra juicy lamb chops
Make sure the pan is hot enough from the start, so the chops develop a lovely crust without losing their juiciness.
Resting after cooking makes a big difference, as the meat becomes more tender and the juices redistribute more evenly.
Serving
Serve the lamb chops while still warm, with lemon wedges and the aromatic rosemary butter. They go perfectly with a fresh salad, roast potatoes or grilled vegetables.
To make the presentation a little more inviting, arrange a little extra rosemary and some lemon slices on the platter. This adds more colour and makes the dish look more attractive on the table.
This dish shows how much flavour you can get from a few good ingredients and simple preparation. Lamb chops with rosemary butter and lemon are therefore an obvious choice when you want to make something quick, classic and truly delicious.
