Shanghai noodles is the kind of dish that can quickly become a favourite when you want something warm, flavourful and filling without spending the whole evening in the kitchen. The soft noodles, juicy pork and green bok choy leaves make a really delicious combination, while the deep flavours of soy sauce and five-spice bring everything together beautifully.
It is also a dish that works really well when brought together over high heat, where the ingredients can be tossed together quickly. A spacious wok pan is ideal for quick frying and tossing, giving the noodles, vegetables and meat enough room to heat through thoroughly.
Ingredients
-
400 g noodles
-
2 tbsp sunflower oil
-
1/2 dl dark soy sauce, optionally Japanese soy sauce
-
100 g minced pork
-
100 g shiitake mushrooms
Bok choy
-
2 tbsp soy sauce
-
1 tsp salt
-
1 tsp sugar
-
1 tsp five-spice
-
Optional chilli
Method
-
Cook the noodles according to the packet instructions, but reduce the cooking time by 1 minute. Leave the noodles to drain for 3 minutes, then drizzle with sunflower oil. Once the noodles have cooled, toss them in the dark soy sauce.
-
Fry the minced pork for a couple of minutes. Add the shiitake mushrooms cut into thin strips and fry for another 1 minute. Then add the separated bok choy leaves and stir everything together well.
-
Mix the noodles into the pan and heat the dish through for 2 minutes. Season to taste with soy sauce, salt, sugar, five-spice and optional chilli.
When dinner should be easy and full of flavour
Shanghai noodles is a good choice for a dish that feels both comforting and uncomplicated. It brings a few ingredients together in one hot pan and delivers plenty of flavour without making things more complicated than they need to be. When it is time to toss everything together quickly at the end, it is handy to have a wok pan from ONYX Cookware with plenty of room for noodles and vegetables, so everything can easily be combined and heated through evenly.
