Quesadillas are the kind of dish that saves a busy weekday. You get great flavour from just a few ingredients, and everything can be made in under half an hour.
The trick is to keep the filling relatively dry so the tortillas don't soak up liquid and turn soft. Cook over steady heat, too, so the cheese has time to melt while the outside turns golden and crisp.
What you'll need:
Ingredients (4 pcs.)
-
4 large tortillas
-
250 g minced beef
-
200 g fresh spinach (rinsed)
-
1/2 green pepper
-
1 dl sweetcorn
-
1/2 red chilli
-
200 g grated cheese
Accessories
-
Salsa
-
Mixed salad

Method
-
Prepare the vegetables. Dice the pepper finely and finely chop the chilli.
-
Fry the beef and pepper directly in the pan and add the fresh, rinsed spinach and sweetcorn. Then let the liquid reduce
-
Stir in the freshly chopped chilli.
-
Divide the beef between the 4 tortillas, covering one half of each, and sprinkle with cheese.
-
Fold the other half over and fry lightly on both sides.
-
Cut each tortilla into four and serve with salad and salsa.
A few tips along the way
If the filling looks juicy in the pan, give it a couple of extra minutes before filling the tortillas. If you'd like to vary the dish, you can easily add red onion, jalapeños or beans without making it any more complicated.
Want to make quesadillas too?
Beef quesadillas are ideal when you want something quick, crisp and filling. Once the filling is ready, the rest comes together quickly, and you can easily adapt it with more chilli, extra vegetables or your favourite cheese.
If you'd like to give the recipe a go, it's even easier to get neat dice and even frying with a good frying pan and a sharp vegetable knife.
