The edge of an ONYX COOKWARE™ knife uses our patented hybrid ceramic-steel compound to give you the best of both worlds, with none of the downsides; The extreme and long-lasting sharpness from a ceramic knife, combined with the longevity and durability from a high-quality steel knife.
During the forging process we take a 5mm thick plate of our ceramic-steel compound and plasma weld it onto the steel blade, to form an edge with a hardness of an incredible 64 HRC on the Rockwell scale. This means that our knives will retain edge sharpness longer than any other steel knife on the market.
We then use precision grinding on the edge of every single knife we make. The unique composition of our patented hybrid ceramic-steel allows us to use more aggressive grinding methods than would normally be available during the production of a regular steel knife. That is how we give you the sharpest edge you will ever try, and continue to use, without dullness!
