Here is a recipe from ONYX Cookware for Galette, a lovely dish when you want to make something that looks inviting while being delightfully uncomplicated. The combination of the crisp exterior and juicy filling makes it ideal for lunch, dinner or as something extra delicious to share. The filling is fried first so the flavours can really come together. When it comes to assembling and baking the dish, good cookware is important to make the process easy and manageable.

375 g plain flour
-
1.5 tbsp sugar
-
1 tsp salt
-
125 g butter
-
1 dl water
Filling
-
4 apples
-
2 onions
-
50 g diced bacon
-
2 tbsp sugar
-
1 tsp salt
-
1 tbsp honey
-
1 tbsp butter
Method
-
Mix the plain flour, sugar, salt and diced butter. Bring the pastry together with ice-cold water and refrigerate for 10 minutes.
-
Cut the apples and onions into thin wedges. Fry the apples, onions and bacon in a frying pan, with butter. Add the sugar, salt and honey after 1 minute and leave to caramelise.
-
Spread the apple and onion mixture in an even layer in the pan. Roll out the pastry to a thickness of approx. 2 cm and place it over the filling in the pan. Fold the pastry in over the filling all the way around. Brush with egg if desired. Bake in the oven for 30 minutes at 200 degrees.

This galette is a good example of how just a few ingredients can become something that feels rustic, homely and truly inviting. The sweet flavour of the apples, the soft onions and the salty bacon go well together, creating a dish that is ideal when you fancy something warm and comforting.
