Sprøde citronvafler i ONYX Cookware 4-i-1 sandwichmaskine

There is something special about crisp, golden waffles that are still light and airy inside. This lemon waffle recipe is for you if you want to make waffles with plenty of flavour and a fresh balance of sweetness, vanilla and lemon.

The waffles are ideal for breakfast, afternoon coffee and cosy moments at the weekend, and they are easy to make. In this recipe, the batter is made using a stand mixer and the waffles are baked in a sandwich maker from ONYX Cookware. This makes it easy to achieve a smooth batter and a crisp result.

Crisp lemon waffle recipe

Ingredients

  • 3 eggs

  • 75 g butter

  • 2 tbsp sugar

  • 1 tsp vanilla sugar

  • 3 dl buttermilk

  • 275 g wheat flour

  • 1.5 tsp baking powder

  • 0.5 tsp bicarbonate of soda

  • 0.5 tsp salt

  • finely grated zest of 1/2 organic lemon

  • 1 tbsp lemon juice

Method

  1. Melt the butter and let it cool slightly.

  2. Separate the eggs into yolks and whites.

  3. Preheat the ONYX Cookware 4-in-1 Sandwich maker with the waffle plates fitted.

  4. Whisk the egg yolks with the sugar and vanilla sugar until pale and light.

  5. Add the buttermilk, lemon zest, lemon juice and melted butter.

  6. Mix the flour, baking powder, bicarbonate of soda and salt in another bowl, then stir into the batter until combined.

  7. Whisk the egg whites until stiff in a clean bowl, then gently fold them into the batter at the end. This makes a lighter, crisper waffle.

  8. When the sandwich maker is hot, add a suitable amount of batter to the moulds — fill them generously, but not right to the edge, so the batter is not squeezed out when the lid is closed.

  9. Bake the waffles until golden and crisp.

  10. Place them on a wire rack straight away to keep them crisp.

How to serve your lemon waffles

The combination of buttermilk, bicarbonate of soda and baking powder gives the waffles a light and airy texture, while the whisked egg whites help make them extra crisp. Lemon zest and lemon juice add a fresh flavour that goes well with the vanilla and makes the waffles especially good with classic toppings.

Serve them with icing sugar, fresh berries and perhaps a little vanilla ice cream, whipped cream or jam. The combination of lemon and vanilla is particularly well suited to simple servings that let the fresh and sweet flavours shine without overpowering the waffles.
